 "I  have always cooked. From my early days cooking with my mother, I left school to work long hours in a local hotel. Those days we had to work split shifts, which was a real pain. Having attended college on a part time basis I gained my qualifications and quickly moved on to try different jobs. I arrived in banqueting in my early twenties, developing a passion for quality in numbers. I love the challenge of making a restaurant recipe work for numbers, adapting it and tweaking it until it produces the end result that I was looking for. Three years ago I came to Easterbrook Hall and during this time I have refreshed all the menus, produced new ideas and now develop all of our products in-house. Not only do I believe that we now have an excellent product at Easterbrook, I feel we are the market leaders. Why copy when you can lead the way? I’m passionate about presentation and new developments, I never sit still, I’m always looking for new ideas and trends, much to the teams delight! At the moment we are working on giving our food provenance, and for the future, well you will have to keep checking my blog to see what I get up to...."   Russell Pearce, Head Chef
