Last week, Head Chef Russell Pearce said farewell to the team at Easterbrook to embark on his own restaurant project in his hometown Moffat - Brodies. Russell came to Easterbrook in 2007 and transformed the culinary offerings at Easterbrook with his passion for 'wow' factor food and claimed his most memorable accolade by cooking for her majesty the Queen at Easterbrook last July. We wish Russell the best of luck and we can't wait to visit his new restaurant!
Before Russell departed he spent a few weeks with our new Head Chef Jonathan Brett who is settling in to Easterbrook life well and keep posted for a full introduction to Jonathan to find out what he is most looking forward to and what is signature style is.

Yet another WOW from Easterbrook..........
At this year's wedding show we were proud to launch our new savoury & sweet cones. "These funky little cones offer visual impact as well as delightful flavours". The savoury cones can be incorporated into your reception period and served instead of traditional canapés, and the sweet ones make an idea addition to your evening buffet. Speak to the Events Office, if you wish more information on this exciting new product.

Congratulations to Faye Lipton from St Joseph’s school for winning the regional final of Future Chef. Hours of practice and with gentle coaching by me, ensured her dishes of Pan-Fried Smoked Haddock with a lemon cream sauce and a russe basket of Warm Winter Spiced Fruit Salad, came out top! Faye now goes forward to the Scottish final in January. Well done & good luck Faye!

Last week saw me revisiting St Joseph’s school, Dumfries. This was the school’s final cook off to find their entry for the 2011 Future Chef Competition. As normal, the standards and the commitment from the ten budding chefs were outstanding, it was very difficult to judge. After following the judging criteria (workmanship, presentation, flavour & menu balance), Faye Lipton won. Her dish of slashed smoked haddock with cous cous, not only tasted good, but was also very colourful. I will now be mentoring Faye as she enters into the regional finals. Good luck Faye!

Last Monday I visited Braehead Food’s open day. This was a fantastic day out, albeit the drive up in that rain was dreadful!
I watched Steven Doherty’s cooking demonstration, which was great. He gave clear and concise instructions, with some wonderful samples to taste, and it was great to chat to Steven afterwards. The tour of the game processing plant was very interesting and informative. The insight of the warehouse to view the different products guided by Gavin (warehouse manager) was very much appreciated. It was great to see the suppliers and even more interesting products, especially the fruit flavoured chocolates! Let's hope Braehead stock some of them! Lunch was delicious and it was finally great to meet the faces behind the voices on the phones!
Looking forward to using the new products & creating some new ideas for Easterbrook!
