Last week saw me revisiting St Joseph’s school, Dumfries. This was the school’s final cook off to find their entry for the 2011 Future Chef Competition. As normal, the standards and the commitment from the ten budding chefs were outstanding, it was very difficult to judge. After following the judging criteria (workmanship, presentation, flavour & menu balance), Faye Lipton won. Her dish of slashed smoked haddock with cous cous, not only tasted good, but was also very colourful. I will now be mentoring Faye as she enters into the regional finals. Good luck Faye!
